During the Seder they not only recall the story in Exodus they see, smell and feel liberation, and recite prayers and contemplate the different stages in the story. The Seder plate id the focal point of the proceeding on the first 2 nights of Passover. The Seder plate hold around 7 items that symbolize different parts of the Passover story. But what goes on the Seder plate? - Shank Bone (zeroa): this is a roasted bone with a small piece of meat on it. It is symbolic of the lamb that was sacrificed the night the Israelites fled Egypt, which was the most important part when it was celebrated in the time of the temple. - Egg (Beitzah): is seen as representing the cycle of life. - Charoset: sweet salad of fruits, nuts, wine and cinnamon that represents the mortar the Israelites used to make bricks. - Vegetables (Karpas): during the Seder the vegetables are dipped into salt water representing and reminding them of the tears of the Israelite slaves. - Bitter herbs (maror and hazeret): it is symbolic of the bitterness of slavery. - Haroset: this s a red/ brownish paste which is symbolic of the clay the Israelites used to make bricks and mortar for the Egyptian cities they would build. The sweetness of the Haroset offsets the bitterness of the herbs reminding them that their freedom offsets the taste of remembering slavery. - Salt water: is representative of the tears and sweat of slavery.
