fresh fish, cucumbers, pico de gallo, cumin-lime vinaigrette, EVOO, placed on top of guacamole; topped w/ fried phyllo dough, cilantro, lime zest; tortilla chips

ESCABECHE OF GULF SHRIMP

5 cooked and peeled gulf shrimp, cumin-lime vinaigrette, apple/pear/bell pepper salad, avocado, Serrano/Serrano salsa, olive oil, herb salad, orange zest, and black lime.

Crudo

American gulf red snapper sashimi, on top of orange segments, sliced jalapeño, and an apple/pear/red pepper salad. Seasoned with lemon juice/zest, Tigre de Leche, Ahi Amarillo oil, shallot, and basil.


Guest should eat slice of fish first and then scoop the sauce and other fruits to eat with it.

Peel & Eat gulf Shrimp

6 ea chilled poached gulf shrimp, tossed in olive oil, lemon juice, old bay seasoning. Served with cocktail sauce, tarter sauce, and lemon.
