First, configure the Default Thru Instrument. If set to Follow First Selected, select the track for the sound source. Then OPTION-Click on the MIDI region in the Region list and the region will play back using the assigned Default Thru Instrument.

Becomes a grabber, allowing you to move the event to a different pitch, beat, or sub-beat.
