What is dextrinisation? Give an example. |
The process that occurs when starch is exposed to dry heat: starch is broken down to dextrin, resulting in a change in colour to golden brown Eg Toast |

What is gelatinisation? Give an example. |
The process that occurs when starch absorbs liquid in the presence of heat. This causes thickening. Eg Rice |

Syneresis (clue is it has to do with egg) |
When egg sits and cools for a moment and the substance looses liquid which collects underneath. |

Functional properties of cereal (clue carbs) |
Carbohydrates and gluten both create texture and fill a recipe. They create a full feeling and give substance. Fibre cannot be fully ingested by the human body therefore is great for the body to keep the track fluid. Thickening from starch (gelatinisation) useful for gravy and soups. |
