Ugni blanc is a great choice because

it is high acid & low alcohol - really suitable for distillation.

Cognac Crus

Grande Champagne. Petite Champagne. Borderies. Fins Bois. Bons Bois. Bois Ordinaires

Best Crus are

Grande Champagne, Petite Champage & Borderies.

best soils

Chalk & Clay because of decent drainage coupled with good water retention.

The wine is delicate & vulnerable to spoilage

& therefore needs to be distilled straight away.

Traditionally

The type of still used

Charentais. It is legally defined.

Charentais must be

made of copper, directly heated & use a worm condenser.

Charentais stills limited to a capacity of

140hL for first use.

Is the limited quantity for 2nd use in a Chartentais still.

A Hectolitre =

100 litres.

Distilling with the lees produces a spirit

with a richer mouthfeel & greater complexity.

Permitted Varieties

Ugni Blanc. Colombard. Folle Blanche. Semillon. Montils. Folignan.

Newly distilled spirit must not exceed

72.4 % abv.

Martell make a lighter style by

not using the lees in distillation.

Cognac must be matured

in oak containers for a least 2 years.

Usually matured in

350L barrels.

2 Type of wood are used

Limousin Forest & Troncais Forest.

Limousin Forest wood (Q. robur)

is more open grained & contributes more tannin.

Troncais Forest wood (Q. sessiliflora)

is tighter grained & contains more aromatic characteristics.

Fine Champagne

blend of spirits made from Grande Champagne (min 50%) & Petite Champagne.

3 Star or VS

The youngest spirit in the blend must be at least 2 YO

VSOP

Youngest spirit in the blend must be at least 4 YO

XO / Napoleon / Extra / Hors d'age

Youngest spirit in the blend must be at least 6 YO.

Only 13% of cognac comes from

Bons Bois & Bois Ordinaries

Cognac is a

Grape Brandy

Grapes are

mechanically harvested & immediately sent for processing

Screw Presses which can exert a great deal of force

are banned as grapes need to be pressed gently

1st Distillation produces

brouillis which is approximately 27 - 30% abv.

used for spirits ages more than 50/60 years in barrel & kept for finest blends.

If a Cru name appears on the label
