What happens when we rotate the altitude select knob?

Preselects altitude in altitude window. If PROF's engaged, sets FMS limits for climb or descent.

Airplane will climb or descend directly to selected altitude (ATS will go to climb thrust or idle descent as required). It's basically Level Change.

How can FMS speed be edited?

By pre-selecting an FCP speed and immediately pushing the FMS SPD switch. Pushing it again will cancel this edit return FMS speed to ECON on the speed tape.
