What is the function of α-amylase?
An enzyme found in the saliva which breaks down starches into simple sugars
What is the function of pepsin?
An enzyme found in the stomach which breaks down proteins into peptides
What do α-amylase and pepsin have in common?
They both function at around 37˚C, or the internal temperature of the body
What happens to enzymes when the pH of their environment changes significantly?
Their function is diminished
What happens to enzymes when the temperature of their environment changes significantly?
Their function is diminished via a disruption of their conformation
What would happen to the activity of DNA polymerase in an acidic environment?
Aspartate residues on DNA will become protonated and unable to bind with the Mg2+ cofactor, inhibiting the activity of DNA polymerase
