What is "Up-selling Liquor?"
|
Using your knowledge of the premium liquors we offer to up-sell drinks, For example: You guest orders a Gin and Tonic. You can casually suggest premium liquor by inquiring, "Would you like to try Tanqueray, or Bombay Sapphire?"

Why "Up-sell?"
|
Up-selling not only benefits the restaurant's sales, it benefits you, the server. Because a vast majority of guest tip their servers based on a percentage of their total guest check (and of course awesome service), the larger the guest check, the greater the tip will usually be. Selling premium liquor versus well liquor or premium wine versus House wine will dramatically increase your sales. Be familiar with a few premiums of each type of liquor so that you can be quick to suggest them.

A well drink is any drink made with "well" liquor, also referred to as the "house" brand.

What is a "top shelf" drink?
|
"Top Shelf" or premium liquors are brand name products and they often cost significantly more than products used as "well" liquors.

What does the "XX" button mean and do ?
|
: Meaning "double". The Drink gets more liquor. This button charges the guest $2.00more for the extra liquor. This Does not mean that the drink will come in a larger glass-only more alcohol is added. Suggesting a double is another chance for you to up-sell a drink. Taking the drink from 1 and 1/4-oz. to 2 and 1/2-oz.
