Who doesn’t look forward to a slice of yule log during the holidays? This log shaped cake is a real treat and can be taken in so many directions. You can do red velvet cake, vanilla, strawberry but chocolate is always popular. Rather than plain chocolate, let’s give it depth with some coffee. A mocha yule log is a fun play on the traditional version. Every bite is so rich and decadent. Aside from making sure it tastes good, yule logs are about presentation. It should look like a log and when you slice into it the cake and cream filling must create a beautiful spiral. Check out the mocha yule log recipe below.

Serves 12

Cake
• 1 cup granulated sugar, divided
• ½ cup cake flour
• ¼ cup unsweetened cocoa powder

Lightly grease the parchment with oil and preheat your oven to 350 degrees F. Add the egg yolks into a bowl and use an electric mixer to beat on high until a light and fluffy consistency is achieved. Once the yolks are light and fluffy, slowly begin to add the half a cup of sugar until thick and light yellow in color.

In a separate bowl combine the cake flour, cocoa powder and salt. Gradually add the dry ingredients to the egg yolk mix until well combined. Add the egg whites into a separate bowl and beat on high until soft peaks form. Follow by adding the remaining ½ cup of sugar to the egg whites. Beat on high until stiff peaks form. It is best to add the sugar to the egg whites in one tablespoon increments. Add ¼ of the egg white mixture into the chocolate mix at a time as well as the vanilla extract. Bake the cake in the oven for about 15 minutes. You will know it’s done when the cake springs back when touched. Keep an eye on the cake. It is very important not to overbake it. Leave the cake to cool for 5 minutes.

Dust the towel with confectioners’ sugar and turn the cake out onto the towel. Carefully peel off the parchment. Starting at the short end of the towel, roll the cake with the towel and leave to cool. As the cake is cooling, make the cream filling by beating the heavy cream until thick. Combine the instant coffee with the sugar and add it to the cream. Beat until stiff peaks form and place it in the fridge to chill.

Direct your attention to the frosting. To make the frosting, add all the ingredients into a bowl and beat until smooth. Set this aside and unroll the cooled cake. Spread the filling onto the unrolled cake leaving a ½ inch margin around. Carefully roll the cake up again and place it onto a serving platter. Chill for 10-15 minutes. After the cake has had some time to chill and set, frost the cake. Make sure to create lines in the frosting to make your yule log more
