The minestrone soup recipe was chosen because it was achievable in the time provided and it met all of the criteria required, with the exception of dairy. Minestrone has a range of benefits. It usually contains a large amount of vegetables, which adds to both the flavor and the health benefits. The vegetables in the recipe selected include carrots, celery, potato, garlic, tomatoes, kidney beans, and garlic. Most vegetables are very high in fiber, particularly potatoes, which was one of the key vegetables in the minestrone - with approximately 3.8 grams per average potato (Racanelli, 2016).
