Coming into this class I can say for sure I was not a blank slated; a little memory loss here and there but definitely not blank. Being that I had passed through modules such as Meat Hygiene, Milk Hygiene and Food Microbiology; I thought I had the perfect background for this class to be a sweet ride. Or so I thought! Looking back I can say for sure both my lecturer and this course itself had a lot to offer to assist me to be at the level I am now. Even at this stage I had a few habits that were not “Public Health friendly” that I was unwilling to give up. But time really does change a person, once you are moving in the right direction.
When purchasing food quantity was never my only concern, the quality of what I purchase was also of utmost

These are phrases that really tugs the heart when the thought of closing establishment comes to mind. How will I feel laying down at night knowing that I just ended a means by which a breadwinner provides for their family? While in class Ms Johnson was not shy to tell us about her many experiences and the many establishments she had to shut down for many different reason; while listening I have to really ask myself, do I really have the heart or strength for this? Won’t I hated for doing some of the times she has done? But then my faith was reassured when she told us about the many horrors that can occur if the regulations are not enforced and the many sleepless nights she had trying to fix these issues. This thought me that persons may not understand the implications of the different unsanitary practices, whether due to the lack knowledge, misunderstanding or just pure negligence, it is my duty as a future Public Health Inspector to hold true to my role in society. The whole issue of aiding and abating has really shaken me of the consequences that awaits if I fail to carry out my duties in the correct manner. Even on a personal level my behaviour has been impacted. Moving from parties even week end to a few per month and now I prefer intimate settings with close friends; settings that are professional that requires poise and grace (in a Jamaican way). Commanding respect is one of the qualities that a Public Health Inspector must attain, this can only be attained based on how one carries themselves both in and out of the work setting. I highly doubt that anyone would find it assuring to take advice from a person who they saw behaving in a unprincipled manner. In addition to that a Public Health Inspector are sometimes asked to be on school boards, attend special church events and even speak to children on different matter. Those activities won’t be to personals who develops unsavoury reputations within a health district. So a change of the events I part take in and the way I carry myself was the greatest and hardest change I made for this

    The aims of this experiment were to investigate the effect of milk solid content and the varying temperatures of heat pretreatment on yoghurt quality to determine the difference in pH and titratable acidity of fermented milk. In order to carry out this experiment and gain accurate results three variations were tested: yoghurt produced with whole milk pasteurised at 72 °C for 15 seconds, 85 °C for 15 minutes and then whole milk with added 5 % milk solids also heated at 85 °C for 15 minutes, after this pretreatment stage all variables were fermented for 120 min at 44°C. Table 1 shows the varying results of whole milk and whole milk with 5% SMP; in regards to °Brix, pH and titratable acidity, as shown in figure 1 indicates that whole milk with added 5% SMP treatment excels in all three testing components especially with °Brix. The °Brix score for whole milk 5% SMP sample result is 4.56° higher than the °Brix measurement for the whole milk sample.…
