Vegetable Proteins:
The vegetable proteins in the Yves Jumbo Veggie Dogs consists of wheat gluten, soy protein and tofu (water, soybeans, magnesium chloride). Proteins consist of both polar (hydrophilic) and nonpolar (hydrophobic) side chains. The acid group and amine group combine into one molecule which forms interfacial films (Parker, 2003). Therefore, the emulsifying properties of the proteins listed above contribute to the structure of the veggie dogs.
Vegetable Gums:
The vegetable gums listed in the Yves Jumbo Veggie Dogs is carrageenan and wheat starch. Carrageenan is common food additive that acts as an emulsifier, stabilizer, water binder, and thickener that improve the texture of food (Cierach, Kapituła, & Szaciło, 2009). In addition,
