What is slow cooking?

All right, let’s get right on it then, Slow cooking as the name implies is the process in which you cook your food on a large bowl or a pot immersed in a liquid for a long period of time, usually a minimum of 3 hours or more. Usual methods of slow cooking involve smoking; stewing or baking the food in low-heat and barbequing is included as well.
Although in the United States slow cooking usually implies the use of a crock pot which is usually a ceramic bowl with a glass lid and basic temperature controls although there are much more advanced versions in the market.
Since we are focusing more on a low carb diet, let me explain what it implies as well on these recipes. Most slow cooking recipes do not include the use of

Some tips for slow cooking

1) Trim off the fat in the meat,

Unlike in conventional cooking during slow cooking the fat will neither evaporate nor drain away, instead it’ll accumulate in the gravy, resulting in a bubbly, oily mixture.

2) Regulate the amount of liquid you use for the boiling,

Since slow cooking is done by covering the cooker with a lid, it will not allow much of the liquid to escape as vapor, so if you are going to do any changes to the quantity of ingredients make sure you change the amount of water or the gravy added accordingly.

3) Leave the cooker alone and let it do its magic,

Even though it’s tempting to lift up the lid once every few minutes, you must not do that since every time you lift up that lid to get a glimpse at the contents, you will let some of the steam to escape, thereby prolonging the cooking time.
