1. McMillan works in three segments of our food system – farm, retail, and restaurant – to “learn how the whole machine works” (2012:333). What is she missing? What other reporting would be needed to paint a more complete picture?
Tracie McMillan collected months’ worth of data about the food industry and system while working in agriculture, food service, and grocery, but they are other aspects she didn’t explore that could help with understanding how our food system operates. McMillan could have broadened her research if she had worked in areas like food processing or distribution. People in America do want to eat healthy – but there are obstacles in the way of some people’s access to healthy food. It all really boils down to money – if you have more money, you can probably afford the healthier food options. If you make less money, you tend to depend on processed, cheap foods. It is very unfair – it costs more to makes a salad than to go through the drive-through and get a whole meal for a few bucks. A wealthy family has more money to make healthier options and eat a balanced diet, while a poor family can’t afford to buy fruits and vegetables. Grocery shopping is all about finding what you can fit in your budget, and for a low-income family it is the processed foods that are already prepared and only take minutes to heat up. Time is another issue in America’s food system. Wealthier families have more time to cook a meal while low-income families who may have to work multiple jobs to support the family don’t have time to make a home-cooked meal. I like to save my money so I try my best to not spend extra money at restaurants. I bring my own lunches and snacks to campus and I always have a snack or piece of fruit with me when I go out to run errands so I don’t have to stop and buy food. If I do eat out and want something cheap, I tend to gravitate towards restaurants like Chipotle or b.good. But when I have extra money or I want to eat somewhere nice, I like to go to the fun restaurants in Providence, especially in the Thayer Street area. Going out to eat is definitely more than satisfying hunger – it is an experience. I like to eat out for the social aspect. It is nice to go out, sit in a restaurant, people watch, and have someone wait on you. My mom and I always like to go out for dinner in Providence and it’s almost a tradition for us to go to a nice coffee shop after and get a coffee or hot chocolate before we head
