The Serious Eats website claims to be the “world’s most trusted authority on deliciousness”, where people come in search of “definitive recipes, hard-core food science and trailblazing techniques”. It is where I found the article Spaghetti with Cacio e Pepe is the Ultimate Roman-Style Midnight Snack. Lucky Peach is a food and lifestyle quarterly magazine where I also read about cacio e pepe in their section titled Three Dishes. The articles were equally interesting, contained recipes to make the meal and had striking and well styled photos of the food and techniques.
Cacio e pepe, as explained in both articles, is a simple Roman dish made with pasta, pecorino cheese and pepper. Considering it has so few ingredients, you would assume it is
