The olive tree has become a part of the Palestinian identity in that the trees have become a symbol of nationalism, and even a place to hide to strike the Israeli Defense Forces (IDF) (Bennet, 2001). For instance, one olive tree will usually fill up a 110-pound sack, then a mill will split open the sack to wash, pit, and crush the olives for their liquid, then a centrifuge will pull the oil apart from the water (Bennet, 2001). After one more refining process the oil will fill a 4.5 gallon jug that usually is sold for about fifty dollars (Bennet, 2001). The farmers also use the ‘cake,’ which is a by-product of olive production to feed their animals, and/or to fertilize the trees. Also, they use the leaves to for fuel and for fertilizers. Unfortunately, the oil produced by most Palestinian farmers, and from the Palestinian mills are not reaching any buyers.
