However if you start with foods that are naturally gluten-free, such as carrots, peaches, raisins, potatoes, and roasted chicken, you will be safe (“New” par. 15). Next, discover what and where gluten is in foods. After eliminating wheat, rye, and barley, become an expert in reading labels on foods (“New” par. 31). Not all companies have “gluten-free” on the front of the box because if the food contains more than 20 parts-per million of gluten, it is not fully considered gluten-free (Sims and Davidson par. 18). Gluten hides in many foods such as, seasoning salts, salad dressings, hard candies, and chocolate.
