Fatty acids and oil are organic substances, which are composed of carbon, oxygen and hydrogen. When carbon, oxygen and hydrogen are chemically combined with a carboxyl group, a long chain is formed, called as fatty acids. Alternatively, when fats react with water, they break into fatty acids and glycerin. Three chains of fatty acids when react with glycerol molecule, they combine to form triglycerides. Molecules of triglyceride are the basis of fats and oil.
The difference in their chemical structure creates alteration in their appearances, properties and functions. There are two types of fatty acids, saturated fatty acids and unsaturated fatty acids.
Saturated fatty acids have no double bond and hence carbon hold all the hydrogen atoms

What stopped people before using coconut oil in the diet was the risk of heart diseases that are associated with an increase in blood cholesterol level. First, cholesterol is not the only reason of heart diseases. Secondly, there are two types of cholesterol levels in the blood, LDL (bad) and HDL (good). When there is an increase in LDL cholesterol, this may lead to heart diseases. To prove that coconut oil does not cause heart diseases, medical records were compared of both western people and tropical population. It was found that western people consuming sunflower and olive oil have high risk of heart diseases than tropical people consuming coconut oil diet. An experiment was carried out among Filipino women, those who didn’t have coconut oil a part of their daily diet, HDL levels in there found higher than those women those consume coconut oil. Coconut oil also helps with weight loss. It is a natural source of fatty acids, which burn unwanted fat in the abdominal cavity and ultimately get rid of a very common health problem, obesity. Moreover, it was tested that the more healthy men consume MCTs at breakfast, the less they consume calories during lunch, and therefore coconut oil reduces their hunger.
