The science behind eating more fat and less carbs to lose weight is the impact that some of these fats have on the hormone, insulin. Insulin is released when you eat and its job is to get glucose into cells where it can be used up. Consuming sugars and refined carbohydrates produces the highest levels of insulin. Dietary fat, however, doesn’t trigger any direct rise in insulin at all because it is not broken down into glucose easily. When you have a diet high in fats and low in carbs and sugar insulin is constantly low and you are no longer able to get your energy from glucose. Thus, the body switches to using existing fat stores for energy instead. Whenever your body is in need of energy instead of using up glucose it would be burning fat
