I find that for something as simple as sugar it history is as extensive as the history of civilization itself. In its pursuit wars were fought, people were enslaved to make it, and at one point it was worths its weight in gold. It was so highly valued that new sources of it were discovered as well as the process to extract it. I would say that there are few food items that have as rich of a history as sugar. In fact it is safe to say sugar is responsible for the popularity of another delicacy known as chocolate.
