In the beginning, I wasn’t fond of beer, but after the project I found that I enjoyed beer more when paired with foods that I enjoy. I learned that different beers bring out and complement different flavors in food, for example, if you want to complement the flavor in a beer then you will match a key flavor found in the beer with a key flavor found in the food you wish to pair with. This rule generally follows the wine rule which is light with light and dark with dark. So a dark beer would pair with a heavier item such as a steak and a light beer would pair with a lighter item such as pasta. One of my favorite pairings in this project would have to be pairing the Drake's Hopocalypse DIPA with the caramel cheesecake. I did not really have much knowledge about beer in general in all honesty. I do, however, have some knowledge with wine and how to pair wine with food, so I thought that it might be similar. It turns out that this was a bit different and more difficult than I had initially thought. In my opinion, trying to pair beer with food required more knowledge and experience than the five weeks of beer knowledge I have gained so far in this class. However, with each success, partial success, and each failure, I learned and walked away with more knowledge than I had going into this project. It was exciting when a pairing worked well, but it was also a great learning experience when the beer did not pair well with the food and we were able to talk it over and learn why the food and the beer did not pair well. The one thing that surprised me was and was interesting, was pairing a beer with a desert food. I never thought of pairing beer with dessert foods, but pairing the Drake’s Hopapocalypse Double IPA with the Caramel Cheesecake turned out to be a great pairing and my favorite pairing of them
