Symbolic conditioning is the conditioning of a person to respond to a certain symbol. Meaning that when a certain symbol is shown, there are certain expectations or behaviors of a person that present themselves. For example, the book used the example of an altar as the symbol for conditioning of catholic practitioners, which may cause them to remember certain aspect of a regions upbringing or make the sign of the cross.
