In regard to food safety, the event manager and the concessionaire will need to have a detailed plan to ensure that the proper food handling procedures are deployed for the event. The Cabarrus County public health authority requires all mobile food trucks or temporary food stands to fall under the food and lodging program as well, so all concessions will have to meet the criteria of a particular food code in order to operate under the law.
