SIU Head Start
The Southern Illinois Head Start program is funded through a federal grant which serves income eligible children from three to five years of age. My main goal for choosing SIU Head Start for my practicum was to get experience with small children in a classroom setting. My other goal was to understand how nutrition is involved with the SIU Head Start program. The idea of having direct teaching experience with small children compelled me to choose SIU Head Start for my practicum. During my first week at Head Start, I prepared a presentation on food safety that I would present to them as a refresher training. I used standard guidelines as the basis for my presentation on food safety. I also gave a pre and post-test to evaluate
