It seems strange that a person's paycheck would be dependent on the generosity of the people they serve. Technically tipping is not required, and unless they have worked in a restuarant themselves, people might not realize how important it is to a servers income. Despite this fact, the tradition of tipping is very established, and servers recieve a relatively consistent paycheck. In the first letter, they used a statistic showing that the performance of a server does not drastically affect the tip they recieve. To me, this shows that tips are consistent enough (regardless of the quality of service) to provide a server with stable pay, simaler to an hourly wage.
However, if nobody comes to the restuarant, nobody can leave a tip. On a very slow day where a server might only get if a few tables, they might end up making less than minimum wage for non tipped workers. I work in a very popular resturant and on weekends the dinner rush can be soul crushing. What keeps me working hard and maintaining a high level of service is the fact that I am making a lot of money. Another way to say this is that the amount of money a tipped worker makes is directly related to how hard they have to work. Service is incredibly important to the success of a restuarant and the fact that servers depend on tips ensures that the quality of service will remain high even when it's
