Vegetable Quinoa Salad

Ingredients:
- 1 cup of quinoa
- 1 zucchini – diced
- 2 bell peppers – diced
- 1 yellow squash – diced
- 1 fennel bulb – diced
- 1 red onion – diced
- 1 tablespoon of olive oil
- 6 cloves of garlic – chopped
- 1 teaspoon of dried sage
- Juice from ½ lemon
- Zest from ½ lemon
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Pepper
- Salt

Directions:
1. Turn on oven and set to 450F. Prepare a baking sheet and line with aluminum foil. Grease with cooking spray.
2. Cook quinoa according to package directions. Once done, place the quinoa in a bowl and set aside until needed.
3. In a separate bowl, add in the zucchini, bell peppers, squash, fennel, onion, garlic, sage, thyme, and rosemary. Add in the olive oil and mix together until

Turn on oven and set to 375F. Prepare a baking sheet and line with parchment paper. Grease with cooking spray.
2. Roll out pizza dough into a rectangle about ¼-inch thick. Cut out 16 triangles from the pizza dough.
3. Place 3 pepperonis on the bottom wide area of the triangle. Place half a stick of the string cheese on top of the pepperoni then roll up. Place on the baking sheet with the seam side down and about 2 inches apart. Do the same until all the pizza dough triangles are used up.
4. Bake in the oven for 12 minutes.
5. In a bowl, melt the light butter and whisk together with the garlic powder and Italian seasoning. Once the roll-ups are slightly cool, brush with the butter mixture and serve with marinara sauce.
