Mexican cuisine is one of America’s favorite flavor profiles. From chain restaurants to high-end authentic Mexican restaurants, Americans have embraced Mexican food as a popular choice for their dining experiences. Anchorage’s Hacienda Restaurant shares a history of Mexican food in America.

Mexican cuisine is a fusion of Mesoamerican cooking (extending from central Mexico to areas in Central America) with European influences, particularly Spanish elements after the Spanish conquest of the Aztecs in the 16th century. Corn, beans, avocados, tomatoes, and chili peppers are staples along with rice, meats, and dairy introduced by the Spanish.

Besides specific ingredients, the Spanish also introduced European cooking techniques and various herbs
