Red Lobster Interview Report

For our course project, my restaurant of choice was the Red Lobster located in downtown Silver Spring, Maryland. Red lobster is one of the world’s most famous casual/family seafood restaurants. It has been a staple of downtown Silver Spring’s eclectic dining community for more than 15 years. Interestingly enough, in all the years I’ve been dining at red lobster, I’ve never really given any consideration about what happens behind the scenes and the day-to-day operations. Luckily, after interviewing the manager, Harrison Shea, I’ve a better appreciation for just how challenging working in the restaurant industry can be.
Mr. Shea was very accommodating and welcoming when I approached him about participating in this interview. We met on Thursday, November 17th, around 2 PM in the afternoon, and he took me on a guided tour as we talked. The peak lunch time crowd of customers was slowly trickling down.
