Robusta and Arabica tree are the two source of coffee beans. Robusta is mainly found in south Asia and Brazil. The bean is smaller and rounder and more bitter-tasting, with about 50 percent more caffeine than Arabica. The Robusta bean is about 30 percent of the world 's coffee market and is larger than The Arabica plant. This plant endures warmer temperatures and withstands lower altitudes than the Robusta coffee trees. Arabica is found in Ethiopian coffee trees and is 70 percent of the world 's coffee production. Arabica grows best in higher altitude, mild temperatures and where there is lots of rain per year for growth in the plant. Also, Ethiopia is where coffee was first originated from. An Ethiopian legend states that coffee was discovered by a man named Kaldi. Kaldi was a goat herder who found his goats full of energy on day running and jumping after eating some bright red berries off a shrub. Curiously Kaldi tried the same berries and had a similar abundance of energy. Arabica coffee plants grow up to 40 feet tall and have branches that grow outwards. This plant is dark green with white flowers growing out. These flowers typically contains berries that are first green when ripe and later on matures to become red. According to the Coffee Chemistry Website the coffee seed has seven layers but, the heart of the bean lies deep within three layers of covering. The outer layer of the heart is the pulp of the cherry. Depending on where the plant grows or ripens the pulps color may vary from deep red to yellow. Underneath the pulp, is the parchment layer that is a jelly-like layer protecting and covering the bean. The parchment layer is rich in sugars and is a great energy source during the fermentation process. Right underneath the parchment layer, is the silverskin layer which consists of a thin paper-like tissue surrounding the bean which usually comes off during the roasting of the bean. C. The Arabica plants require lots of sunshine and warmth. The Coffee Belt contains regions around the middle of the world that have the right conditions needed in order to grow coffee. It is at least 1,000 miles long and runs and is bounded by The Tropic of Cancer and The Tropic of Capricorn. The Tropic of Cancer being the latitude most north from the equator and The Tropic of Capricorn being the latitude most southern from the equator.
