Prickly pear cactus is a species of the genus Opuntia and Family Cactaceae that grows widely in the North American deserts. The plant has flat fleshy pads, which are modified stems and look like large leaves. Its leaves are small wart-like projections that appear on the stem. The fruits and pads of this plant are rich in slowly absorbed soluble fibers, which help in regulating blood sugar levels (Davidson, 1999). Comfy Beverage Company intends to venture into the business of processing and selling prickly pear juice and prickly pear marmalade.
