The other day I had a craving for Mexican food. I didn't want to do the same old black bean tacos though. Don't get me wrong those or delicious but I'm guilty of eating them way to often. At one of my favorite stores I've seen vegan chorizo, I never got it though because I didn't know what it was and wasn't sure I'd like it. I was in the mood for switching it up, I decided what the hell why not. In doing that two things happened, one it's so good and now one I'll be using it a lot more! Two I created an amazing street taco that you can snap together in 30 minutes or less. Trust me when I say you have to make this recipe. You won't regret it and your tummy will thank you.
