Peanut Butter and Jelly Oatmeal

You’ll Need:
 2 cups oats, steel cut
 6 1/2 cups filtered water
 1 tsp salt
 1 1/2 tsp ground cinnamon
 3/4 cup jam of choice (strawberry, blueberry, guava, etc)
 3/4 cup creamy peanut butter, room temperature
 Unsweetened almond milk
 Nonstick cooking spray

How to Prepare:
1. Grease the Crock Pot with nonstick cooking spray.
2. Mix together the water, oats, cinnamon, and salt in it. Cover and cook for 8 hours on low.
3. Stir the peanut butter into the oatmeal until thoroughly incorporated, then stir in the jam. Serve warm with almond milk. Walnut and Banana Frittata

Place the dried porcini mushrooms in a heat-resistant bowl and pour in the boiling water. Set aside for 12 minutes or more to soak.
2. Place a skillet over medium flame and add the butter or margarine. Once melted, stir in the fresh shiitake and button mushrooms, onion, and garlic. Sauté until onion becomes translucent. Scrape into the Crock Pot.
3. Drain the porcini mushrooms; throw away the soaking water. Add the mushrooms into the Crock Pot.
4. Add the barley into the Crock Pot together with the pepper, salt, and vegetable stock. Stir to distribute the ingredients evenly. Cover and cook on low for 6 hours.
