This is a prospective cohort study. Participants are asked to submit their 7-day food diary every month for three months. After participant completes baseline interview, the coordinators= would ask participants to leave the most convenient phone number that they can send them reminder text messages at the beginning of each month. A package will be shipped to participant’s permanent address every month for three months. The package consists of a blank food diary, and a USPS envelope. Coordinators will mail a gift card to the participant who mail back their completed 7-day food diary.

Outcomes variable is the likelihood of glycemic control. A hemoglobin A1c (HbA1C) level equals to or less than 5.7% is considered as normal glycemic level, which indicates controlled blood glucose. A hemoglobin A1c (HbA1C) level greater than 5.7% is considered as abnormal glycemic level, which indicates uncontrolled blood glucose.
Reasons for dichotomization of outcome values: (1) It is a clinically meaningful cut point. According to clinical evidence, pre-diabetic people with HbA1C level lower than 5.7% indicates that they are able to maintain glucose homeostasis and have lower risk of T2DM. Pre-diabetic people with HbA1C level greater than 5.7% indicates that they are unable to maintain glucose homeostasis and higher risk of T2DM. (2) Other researchers have typically used dichotomized values to determine the glycemic control.
