One of the key signs to look out for when dealing when Mustard gas is for the smell of horse radish and garlic and possibly a yellow tint to the air. Another important thing to look for is the one of the main symptoms of Mustard gas, yellow blisters. To protect yourself against Mustard gas you would want to have a gas mask, and get to higher ground or get away from the area you know has been gassed, and take your clothes off without touching your face, then wash yourself in water, and try to receive medical help as soon as possible.
