All organism possess self defence system which is not sufficient to protect against oxidative damage. Oxidative damage can be reduce by using food containing antioxidant properties (Halliwell & Gutteridge, 1984; Simic, 1988). Antioxidant food can protect the body from damage. Several herbs can be used in this regard but mushrooms are most important. Previous studies has reported the antioxidant activity of mushroom specially Morchella esculenta. Chemotherapy and radiotherapy are the modern ways of cancer treatment but have a less safety margin because of its adverse effect on the host normal cells. For the control and eradication of cancer, natural products has been used (Gibbs, 2000; Gao, 2005).In Traditional Chinese Medicine, mushrooms having medicinal properties are commonly used for treatment of cancer. Various countries like Japan, Korea, Russia and U.S. are used extract of medicinal mushrooms for treatment of cancer (Mizuno et al., 1995).
