In spite of ingestion of these additional commercially produced glutamates, our body metabolizes this glutamate in the same way it does with the other glutamates found naturally in foods. What that means is that our body does not distinguish between naturally occurring glutamates or the MSG found in a bottle of ketchup. Interestingly, a research report not suggests that glutamate from food or MSG is important for a normal digestive function. (Food Insight, 2009) In 1958 the FDA (U.S. Food and Drug Administration) designated monosodium glutamate as a GRAS (Generally Recognized As Safe) ingredient, along with other commonly used food additives like salt, pepper and baking powder amongst others.

In one study, he induced neonatal mice from ages 2 to 9 days old with small doses of Monosodium Glutamate. He observed brain lesions and other psychological effects in the mice. (Olney, 1969) However, the dosage of MSG that was used was extremely high and was force-fed, does not directly indicate how humans consume MSG. As studies also suggest that a normal oral ingestion of MSG through food, including high amounts that exceed 40 g/kg body weight, have found no harmful effects on the human brain. (Institute of Food Technologists' Experts panel on Food Safety and Nutrition., 1987) Alternatively, William Pardridge, M.D., has illustrated that dietary MSG does not enter our cerebral cavity or the brain as the blood-brain barrier in our system maintains a transport system for glutamates or acetic amino acids that do not allow the glutamates to circulate through the human brain.
