Central Texas Expressway, the spot previously occupied by the Red Onion Indian Bistro. “We saw an opportunity for growth due to the city's population and felt that our Mexican cuisine would fit Killeen well, since there is not an abundance of restaurants offering what we offer,” said Joe Fuentes, general manager. More than 40 food items, plus appetizers, soups and salads and desserts, comprise the menu with traditional Mexican favorites, like enchiladas, burritos and tacos. But MasFajitas offers its own specialty foods, such as stuffed fried avocado with grilled fajita chicken, Veracruz catfish and shrimp, and steak ranchero and Pupusas, a pork and cheese stuffed tortilla.…

Women, Men, and Food I grew up in a very traditional Mexican family with my culture interspersed throughout all the food I ate everyday. My mom had a part-time job and stayed home to cook and clean like her mother had done and her grandmother before her. That was the routine from the time I was born until I got to the fourth grade. During that point of my life, fresh homemade tortillas were ready on the table by the time I got home from school with some kind of delicious accompaniment. Anything, from a caldo de pollo con albondigas (chicken soup and meatballs) to a delicious mole.…
