Mercy General Hospital (MGH) is considering altering the recipes for two of the egg entrées served to patients at breakfast. They would like to replace the eggs with egg substitute in the breakfast bake and veggie omelet, in order to make the entrées compliant for a heart healthy diet. This idea is in response to complaints from patients that the heart healthy breakfast menu is too repetitive. MGH has a Heart and Vascular Center, therefore they consistently have a high amount of patients who are on a heart healthy diet, and would like to accommodate their preferences. The breakfast bake and veggie omelet are each served once a week on the regular and consistent carbohydrate diets, but patients on a heart healthy diet receive scrambled eggs every day of the week. On the days these entrees are served the cooks typically prepare 2 batches of the veggie omelet and 3 batches of the breakfast bake, although this count may change based on the census. If the heart healthy menu is modified to include the veggie omelet and the breakfast bake the cooks will have to prepare an extra batch of each entrée, which would require 3 batches of the veggie omelet and 4 batches of the breakfast bake. The cost to prepare 2 batches of the veggie omelet with regular eggs is $15.10, while the cost to prepare 3 batches of the omelet with egg substitute would be $35.10, therefore increasing the cost by $20.00. The cost to prepare 3 batches of the breakfast bake with regular eggs is $11.31, while the cost to prepare 4 batches with egg substitute would be $23.40, therefore increasing the cost by $12.09. Each entrée is served once a week; therefore these recipe modifications would increase the total cost of eggs by $32.09 per
