Meat proteins contain all essential amino acids necessary for growth and contribute to food industry by imparting specific functionalities (Xiong, 2004).
However, from heath point of view, certain population groups have some problems relating to the consumption of meat because of high fat content (Muguerza et al., 2004). Meat contain cholesterol and high proportion of saturated fatty acids than unsaturated fatty acid that lead to increased risk of cardiovascular diseases, hypertension, cancer etc. Increased proportion of polyunsaturated fatty acid has a suppressive effect on the onset of many diseases like cancer, cardiovascular diseases, hypertension and obesity (Simopoulos, 2002).
