Meat Consumption In North America

I am interested in why we consume so much meat in North America. Perhaps if I compare how we use to farm livestock and produce meat, to how we do it now, patterns would begin to emerge. Are we more concerned with how our food is raised despite consuming greater quantities? Are we able to sustain the amount of meat that we consume on a nation-wide scale? Also, a question I think all of us have asked ourselves before, how much meat should we be eating? These are all topics I would like to expand my knowledge in and try to touch on in my research essay.

To introduce my topic, I would be keen on including my own thoughts and experiences in the trends of modern meat consumption. I feel as a butcher my opinion would be valid on the topic and I have never personally interjected my own thoughts into a paper as a professional in the field. I want to learn how to do so in a proper academic manner. To contrast it I am also a big fan finding out why or how we got here so I would research how our society has previously produced meat and how livestock has become manufactured on an industrial scale, especially in North America.
