Making The Perfect Flan

Throughout history generations of different culture pass down recipes of certain types of dishes or desserts. In my case my Abuelita, and Puerto Rico itself passed down the recipe into making the perfect flan. Flan is a beautiful Spanish dessert made of smooth cream cheese covered in golden caramel. We mostly make this dessert on holidays or even when we just have a craving. Let me start by telling you how I learned and to appreciate the art of making flan.

It all starts by following my Abuelita's instructions. She would make me get all the materials, and set them on the table. Then she would proceed by telling me how to gradually melt the sugar, turning it into a golden-brown color. The aroma of the delicious sweet scent of the caramel makes me feel euphoria. She would cut a piece and place it in the plate. I love the way the caramel spreads wickedly around the plate like lava from a volcano. Mmm, is the only sound I hear, when taking a bite. I would think to myself how could such a beautiful dessert make me feel so relaxed, or even the fact of enjoying it at the moment. It was like mini explosions were occurring inside my mouth, with just one tiny bite. I used to think that when I took a bite, I would transfer to a skating

park because of the smoothness of the dessert. The taste is creamy, sort of like pudding but tasty too.

In conclusion, this type of recipe and the way my Abuelita would make it, is very special to me. It reminds me of the connection with her and how the taste would make me feel warm and relaxed. It was sort of like when kids get super excited at the sight of candy, that was me with flan. From an early age, all the way to now I still love it and would not change that for
