In Unit 1, I learned about the 10 different nutrition concepts, essential nutrients, metabolism, steps in the development of nutrient dficiencies and toxicities, the ripple effect, malnutrition, chronic disease, engery dense foods, empty calorie foods, and the nutrient dense foods.

In Unit 2, I learned about oxidative stress, osteoporsis, free radicals, anitoxidants, changing diets, changing disease rates, things we should eat, nutritional state of the nation, diseases of western civilization, and improving the american diet. All of these words helped me understand nutrition better.
