Very low fat intake can lead to shortages of many nutrients and cause numerous health problems. If there is no adequate amount of essential fatty acids in vegetable oils, seeds and nuts and fatty fish, the low fat diet will affect the appearance of dermatological conditions. Other consequences of a diet deficient in essential unsaturated fatty acids are prostaglandin imbalances. There are problems with blood pressure, poor clotting and vasoconstriction.
Low fat diet is low in fat soluble vitamins (A, D, E, K). Fats are essential for the absorption and transport of these organic compounds and for the conversion of beta-carotene to vitamin A. Long-term low fat diets are generally associated with caloric deficiency and very low nutrient intake.
