Consuming jaggery is linked with the release of bile from the liver and gall bladder. Bile is in turn inherently connected with the peristaltic movement of the intestines – the contraction and relaxation of the muscles in the intestines that facilitates the movement of food through the alimentary canal. As jaggery encourages the release of bile in the intestines, the peristaltic movement improves and the digestive process continues much more smoothly.
