This recipe for Basic Italian Risotto illustrates a typical method to prepare Italian risotto. The ingredients for risotto may vary indefinitely, as there are numerous types of risotto, but the typical risotto method will remain more or less the same.
Ingredients:
1/2 pound risotto rice of your choice (Carnaroli, Superfino Arborio or Roma)
2 to 3 cups stock or broth (depends on ingredients)
2 to 3 tablespoons unsalted butter, divided
2 tablespoons extra virgin olive oil
1/2 cup finely chopped onion (or thinly sliced scallions)
1 teaspoon minced garlic
1/2 cup finely chopped celery stalks
2 tablespoons celery stalks, sliced into little bits
3/4 cup dry white wine or dry white vermouth

Note: The rice used for typical Italian risotto is usually from the Italian cultivated varieties such as medium-grained Carnaroli rice, also known as "the king of rices". Carnaroli rice has higher starch content, firmer texture, and it keeps its shape better than other forms of rice during the slow cooking required for making risotto.
Another popular rice used for Italian risotto is Superfino Arborio, a variety of short-grained rice with great absorbing power and more starch content than ordinary rice. The starch from rice is released during slow cooking, which is giving risotto its popular tasty creamy consistency.
Roma rice is another popular rice used for Italian risotto. This short-grain Italian rice has the ability to absorb a large volume of liquid, keeping cooked grains separate and distinct, which are excellent features needed for the preparation of tasty risotto.
