As the famous saying goes, there are two types of people on this earth; those who have eaten Italian food, and those who have not. Its presence and power across the world cannot be understated, but if you ask the average person on the street they have no idea where it comes from. When I conducted a brief investigation in the hallways of my school I received only vacant stares and the word “Italy…”. The poor fools had no idea of the illustrious path that gave birth to the pizza they were eating for dinner that night or the pasta salad they had to lunch. The evolution of Italian food starts in the years before the rise of the Roman Empire. Italy had a very volatile and everchanging political scene and the same thing could be said about their kitchens. The barbarians who had originally brought down the Roman Empire also left their influences in the ovens and cutting boards of Italian chefs. Greek cheeses and fish worked their way into the mouths of rich Italians. Olives from the middle east worked their way into the mouths of fishermen at the wharfs. This wide variety of influences made Italian food into what it is today. Just like Italian food, It was only after I was exposed to many different people that I was able to fully mature. I went to a very small middle school; my graduating class was less than 15 people. It was only after I went to Bishop Lynch that I was exposed to many different types of people, just like the Italian palate was exposed to many different cultures. Personally, professionally, and physically I am a very different person than the naïve child who first walked through the doors to highschool. I have been challenged professionally through tests, deadlines, and crazy teachers. I faced challenges in my personal relationships and family
