In Nutritional Quality Assessment of Elementary School Lunches of South Korea and the United States, the authors, Jeon Min-Sun, Young Hoon Kim, and Hak-Seon Kim are professors at universities from Texas and South Korea. They have PhDs and spend much of their time teaching students that are interested in the field of food services. In this article, the authors are mostly successful in persuading those who are within the foodservice chains, that nutritional school lunches are needed in elementary schools to help children make more well-balanced choices and live healthier lifestyles, but they are unsuccessful in not providing more information about their surveys.
The audience of this article are people who work within culinary science and technology. The audience’s interests are how they can improve the quality of school lunches, and what steps need to be taken to move forward with the information given. The authors were less effective by not providing more specific detail about the surveys and assessments being done. Not many researchers have previously done studies on school lunch programs, so the authors only focused on a small portion of the United States and South Korea. These studies can be useful and applied around the world to show those who are interested in culinary science and technology, how the children can benefit from having healthier meals at school. Overall, this article was persuasive in helping the readers understand what needs to be improved in the elementary school
