It is important to understand that everybody has a different metabolism and different adaption capabilities. Once your body acclimatizes to a certain food style even a slight change in that food pattern may disrupt your digestive system, rendering you sick. It is for this reason that there should be no stone left unturned when it comes to hygiene to stay on the ‘safe side’
The Importance of hygiene in food production is not only an important but quintessential element of the basic working of any Food and Beverage Outlet not only in India but the world at large.

It is one of the most basic yet important aspects of hygiene. Washing your hands thoroughly! It is a rather effective way to reduce the chance of contaminating food with bacteria. Personally every time I see a fly sitting on my food, I do not eat it and get it changed, however most people take this very lightly and just shoo off the fly.
People are unaware that one of the most deadly carriers of diseases are flies, which are often seen hovering over food and sitting on sweets. The reason being, unattended garbage bags not only create stale air but also attract flies and mosquitoes. You may also have often seen flies hovering on animal excretion. The flies sit on animal feces which are full of deadly parasites and bacteria. Clinging onto the hairy feet of the mosquitoes, the same may finally end up inside our body via our food, causing various diseases viz food

The porters involved in the delivery and collection of food trolleys are deemed to be ‘Food Handlers’ and hygiene begins from that part itself.

Simple kitchen practices, I believe can make a remarkable difference to the hygiene levels of a restaurant may it be a fine dine or a roadside stall.
Some practices that I could think of are as under:-
 Thoroughly wash and dry your hands frequently while handling food.
 Make sure your hands are dried with a clean towel or disposable paper towels.
 Don’t smoke, chew gum or spit in a food handling area.
 Avoid coughing or sneezing over food or where food is prepared.
 Wear clean clothing, such as apron, mask, glove, steel toe shoes etc.
 Keep your personal items away from where food is prepared.
 If you have long hair, tie it back and cover it.
 Keep your nails short so that they are easy to clean, and don’t wear nail polish as it can chip into the food, contaminating it.
 Avoid wearing jewellery.
 If you have cuts or wounds, make sure they are completely covered by a waterproof bandage.
 Wear disposable gloves over the top of the bandage if you have wounds on your hands.
 Change disposable gloves

By the Enrolled Nurse washing their hands effectively this reduces the risk of introducing microorganisms to the patient, otherwise if the Enrolled Nurse failed to wash their hands the patient may scratch an itch on their wrist then rub their eyes thus in the process transferring any organisms to their mucosal surfaces which may cause further infection (Koutoukidis et al, 2013, p 371). Once the Enrolled Nurse has taken the patient’s pulse the Enrolled Nurse washes their hand once again (Moment 3 &4). This is due to the possibility of the Enrolled Nurse picking up organisms from the patient through direct contact, this then places the Enrolled Nurse at risk of contaminating themselves if they were to rub their eyes or touch their nose and mouth (Koutoukidis et al, 2013, p 371). Due to the amount of visitor’s the patient may receive for medical staff and visitors that will touch many objects in the patient’s room the Enrolled Nurse will also wash their hands (moment 5) after touching the patient’s chart. This is to protect the Enrolled Nurse from any organisms that may reside on the surface and to reduce infecting themselves or passing on the organism to another surface in another patient’s room (Koutoukidis et al, 2013, p 371).…

I’ve seen findings of mold inside the refrigerator and under the sink, because those pieces of equipment haven’t been cleaned properly. Dirty dining room tables and floor - those violations may lead to food cross contamination. It’s can be easily prevented by simple wiping down the table with some sort of cleaner, and sweeping and mopping the flow with soapy water. Their next findings were way worst!…

They all have a reservoir, portal of exit, mode of transmission, a portal of entry, host, and back to the infectious agent that starts the process over again unless people are educated and break the cycle of infection. Evidence based practice shows that hand hygiene is the most important practice to prevent the spread of microorganisms. Although depending on the organism’s reservoir, mode of transmission, portal of exit and entry, different precautions need to be in place.…
