1. Grilled Pineapple
Ingredients
1 firm and ripe pineapple
1 tablespoon dark rum
1 tablespoon fresh lime juice
2 tablespoons dark honey
1 tablespoon olive oil
1 tablespoon grated lime zest
¼ teaspoon ground cloves
1 teaspoon ground cinnamon
Instructions
Prepare the grill for high heat.
To make the marinade, combine the olive oil, cinnamon, cloves, limejuice and honey in a large bowl.
Cut the crown of leaves and the base of the pineapple. While keeping the pineapple standing upright, use a large sharp knife to pare off the skin, cutting downward just below the surface in vertical strips. Cut the pineapple, into half lengthwise then place each pineapple half cut side down and cut into four long wedges; remove
