How Does Coagulation Affect The Curdling Of Milk

Improved Essays
The experiment that the Scientists, listed above, will be performing is about the curdling of milk and how it is affected by pineapple juice, and pineapple enzymes. The Scientists’ problem is whether or not pineapple juice will affect the coagulation (or curdling) of milk. The independent variable in the experiment will be what is added to regular milk (nothing, pineapple juice, or bromelain), the dependent variable will be the speed of the milk curdling. The constant of their experiment will be the amount of time that the milk is observed, and the control will be regular milk by itself. The Scientists first began by studying how and why milk curdles. The process is known as coagulation and does not always mean it is spoiled. During they …show more content…
This causes the proteins to unwind or unfold to make it possible to interact with and clump together in different way than before when they were properly wound and folded. This process is known as protein denaturing. They also found that coagulation could be sped up by the addition of the multitudinous complex of enzymes Rennin, or Rennet, which was originally extracted from the stomachs of calves, but now the enzyme responsible for the coagulation process is formed bio technically. That enzyme is known as Chymosin and what it does is breaks down the protein Casein and allows it to bind together with other casein molecules in clumps by unwinding and unfolding the protein(Janice Lawandi, 2015) and by damaging the micelles that hold the proteins in place keeping them suspended in the liquid form. The Scientists will test this hypothesis by purchasing a kit to build a turbidimeter, a device that shows the turbidity of, in this case, milk (how curdled the milk is). The Scientists will observe each glass of milk for one week, or 168 hours and the whole time be observing the turbidity of the milk. After a week for each glass of milk, the Scientists will then use the data recorded during the experiment to determine which glass has the most light shining through it, meaning that it has coagulated the most throughout the time of a

For this experiment, a few scientists are researching how different flavors/colors of sports drinks effect the amount of red 40 dye in each drink. The independent variable in the experiment is the flavors of Gatorade (a brand of sports drinks) used, while the dependent variable is the concentration of dye the sports drinks contain. The constant variable is the spectrophotometer, the amount of liquid used, and the same type of cuvette. The controlled variable is only using water. In order to determine which drink would have the greatest concentration of red 40 dye, the scientists must first understand what it actually is.…

One of the studies done shows that the process to make curd includes the casein protein breaking down either over time or sped up by a strong acid. This process is called hydrolysis. When this happens, the casein protein structure changes to form curd, and the substances left behind are whey, as well as other minor proteins and water (Boutrou et al, 1). Casein has a molecular formula that dramatically differs from when curdled. The molecular formula for alpha-casein is C38H57N9O9, the most common casein protein.…

Enzymes are protein molecules that significantly speed up the rate of virtually all of the chemical reactions that take place within the cell. In the following lab was to examine an enzyme that is found in pineapples. That enzyme is bromelain its breaks down protein into their protein into their amino acid by a process of hydrolysis. They are found in tropical areas like Hawaii, Thailand, and Brazil. For the first experiment the hypothesis was that the when gelatin was added to the water, fresh pineapple juice, and canned pineapple juice and submerged into the ice chest the solutions would turn into Jell-O.…

Independent Variable(s): Vinegar (200 mL), distilled water (200 mL), maple syrup (150 mL) Dependent Variable(s): Egg Problem: After twenty-four hours in each solution, what will happen to the egg and its mass? The solutions will make the mass of the egg increase and decrease depending on what the density of the liquid is. Hypothesis: If we put the egg in different solutions for twenty-four hours each then it will increase in volume when it's in the vinegar and distilled water but it will decrease in mass when you put it in maple syrup because when it's in the vinegar and distilled water, it has a larger density than the water and vinegar so it will absorb the water and vinegar, the mass will decrease in the maple syrup because the density…

One of the process manipulations was to cut the curds into smaller cubes (low moisture) or larger cubes (high moisture). This process manipulation changes moisture content because smaller curds are not able to retain as much moisture. The smaller the size of the curd, the less moisture it can retain and the faster the curd will dry out (University of Guelph). Less moisture in curds means the final product will also be lower in moisture. Temperature is also one of the process manipulations that can be used to control moisture content.…

When a scientist does an experiment in nature, it’s impossible for him to control everything that happens; hence the experiment is not one that is controlled. The independent variable is the different elevations in which he sets up the plots. He changed where each one was located. The dependent variable is how the trees and species migrated over time, as well as the effects on the wildlife and species in all thirteen of the plots. 9.…

Methods There are many important factors to any experiment, including the materials. To continue, the quantity of materials for this experiment varies from a refrigerator to tweezers, but they all need to be included for the best results. First, the larger materials needed to complete the experiment are refrigerator, freezer, stove, one ice box, one scale which could be large or small, one blender, one cooking pot, one large jar or cup, and at least 400 milliliters of distilled water. Next, the smaller supplies begin with at least five coffee filters, one pair of scissors, enough ice cubes to fill the ice box and have at least eight left over, one potato peeler, at least two potatoes, one knife, one gallon plastic bag, one clean bowl or wax…

There are quite a few controlled variables used in the experiment. The controlled variables are water, the amount of water, Alka Seltzer, and the amount of Alka Seltzer. When conducting this experiment, I will use the same type of water and I will be using the same amount of water for each attempt.…

The dependent variable was the amount of carbon dioxide gas (CO2) produced. Based off the data there was an increase of CO2 as baking soda was increased. This means the hypothesis was accepted. The experiment most likely worked out how it did due to additional carbonic acid being created by the reaction. With more baking soda, there is more to be mixed with vinegar, which means more CO2.…
